Extra Virgin vs Pure vs Pomace Olive Oil: Which to Buy
The real difference between extra virgin, "pure" and pomace olive oil, why "pure" is not the best grade, and which one to buy in Pakistan.

Short answer: extra virgin is the top grade, pressed from olives with no heat or chemicals. “Pure olive oil” is mostly refined oil with a little virgin oil added. Pomace oil is made from the leftover olive paste with solvents and then refined. For eating raw, buy extra virgin; pomace is for massage or heavy frying.
In Pakistani shops all three sit on the same shelf, often in similar tins, and the word “pure” makes the middle grade sound like the best. Here is the difference in plain terms.
The grades at a glance
| Grade | How it is made | Taste | Best use |
|---|---|---|---|
| Extra virgin | Olives crushed and pressed mechanically, no heat or chemicals; free acidity 0.8% or less; no taste defects | Fruity, green, often a little bitter and peppery | Raw on food, everyday cooking at medium heat |
| Virgin | Same process; free acidity up to 2%, small flavour defects allowed | Milder, less fresh | Cooking |
| “Olive oil” / “pure olive oil” | Mostly refined olive oil, blended with some virgin oil | Neutral, light | Cooking where flavour does not matter |
| Olive pomace oil | Oil extracted from the leftover paste with solvents, then refined and blended | Neutral | Massage, hair, deep frying |
The limits above come from the International Olive Council, which sets the trade standards for olive oil grades.
Why “pure” does not mean best
Refining uses heat and filtering to remove faults and smells. It also removes most of the natural antioxidants and flavour that make extra virgin olive oil special. “Pure” on a label tells you the oil comes only from olives, not that it is unprocessed.
Why pomace oil is so cheap
After pressing, olive paste still holds a few percent of oil. Pomace oil recovers it with solvents and high heat, then refines it. That is why it costs much less, and why it has little taste. It is widely sold in Pakistan for massage and hair, which is a fair use.
Which one should you buy?
- For salads, raita, bread and finishing dishes: extra virgin only.
- For everyday Pakistani cooking: extra virgin at medium heat, or a refined olive oil if budget matters more than flavour. See how to choose olive oil in Pakistan.
- For massage and hair: pomace or refined olive oil is enough.
Both Al-Maharah oils are cold-extracted and unrefined: Golden Legacy extra virgin olive oil from Loralai, and Green Diamond wild olive oil from Zhob. Every batch is tested at a laboratory in Quetta.
