This is a simple serving idea for two people: chopped tomato, cucumber and a dressing mixed just before the meal. The quantities are a starting point, so adjust the lemon, oil and seasoning to suit your vegetables and taste.

What you need

  • 2 medium tomatoes
  • 1 cucumber
  • A small handful of fresh mint or parsley, optional
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice, then more to taste
  • A little salt and black pepper

Prepare the vegetables

Wash the vegetables, chop them into comfortable bite-sized pieces and put them in a serving bowl. If you enjoy onion, add a few thin slices. Keep the herbs aside until you are ready to dress the salad.

Mix, taste and adjust

  1. Whisk the olive oil and lemon juice in a small bowl.
  2. Add a little salt and pepper. Taste before adding more.
  3. Pour over the vegetables and toss gently.
  4. Add the herbs and serve alongside bread or your main meal.

If the dressing tastes too sharp, use less lemon next time or add a little more oil. If the tomatoes are particularly juicy, begin with less dressing and add more only if needed.

Make it fit your table

You can keep the salad simple or add cooked chickpeas for a more substantial side. Dress only the amount you plan to serve, and keep the remaining ingredients separate until you need them.
